Many offices are dry and cool. Thirst arrives late, while coffee and back-to-back meetings mean people only drink once they already feel tired.

You do not need to drink a large amount at once

Keep a bottle in sight and take a few sips at each task switch. If plain water feels dull, add a slice of lime or a few mint leaves.
